Piglatin Cocina - Latin Fusion Street Food

 

A recent newcomer to the north side of Colorado Springs, Piglatin Cocina offers a locally owned, unique, and eclectic experience to this oft chain-saturated part of the city. What originally began as a food truck centered on street food has transformed into a brick-and-mortar location you absolutely have to try out. Located in a rather non-descript strip mall, what it lacks in outward glamor it makes up for in every other way.

 

Piglatin Cocina is undoubtedly a get-to-know your fellow patrons kind of place – with its free for all style seating, customers are encouraged to use what space is available and socialize with new people in an open and unique way. A drink or two of their specialty cocktails will have you making new friends in no time. The staff is courteous and attentive but gives you sufficient space to enjoy the community feel of the restaurant without being smothered.

 

To start off, Piglatin Cocina’s mixed drinks are incredibly well balanced. Whether you’re looking for something sweet, bitter, or strong, they will undoubtedly have the drink for you. The house margarita, in particular, wasn’t drowned or too strong – just the perfect pick-me-up after a long day’s work. In keeping with its street food roots, Piglatin Cocina’s taco offerings are simple but elegant. The Island Taco transports you to a beach in Puerto Vallarta enjoying the cool ocean breeze with its pineapple braised pork, jalapeno-cilantro cream, cabbage, cotija, and lime served on a crunchy blue tortilla. The Yucatan Taco highlights its Mayan roots with banana leaf tequila braised pork, cilantro, cotija, and pickled onions. For an elegantly eclectic twist on an all-American classic, try the Piggy Grilled Cheese – cooked to perfection and served with a mixed cheese blend, bacon, spinach, and sautéed onions, this will have you thinking of grilled cheese in a totally new, bright light. Finally, if you’re still feeling like you could use another fun twist on an old classic, the churros served with two sweet sauces will finish your meal on the most pleasant of notes.
