Over Easy in Colorado Springs offers an interesting twist on breakfast and lunch which is sure to impress even the pickiest of eaters. The recently-opened location in University Village on north Nevada perfectly complements their down town venue on south Tejon, allowing even more Colorado Springs residents to enjoy breakfast at this great joint.

For those wanting to begin their day with a sweet start, breakfast at Over Easy is sure to satisfy. The stuffed French toast made with fresh brioche, cream cheese, caramel drizzle, fresh strawberries, cream Anglaise, maple syrup, and whipped cream will bring a smile to anyone with even the slightest sweet tooth. The variety of pancakes on the menu is sure to fulfill even your wildest pancake fantasies, with each item being served with three deliciously fluffy pancakes. The blueberry pancakes are by far my favorite on the menu, being closely followed by the incomparable chocolate chip pancakes.

Among Over Easy’s most irresistible lunch dishes are their variety of Benedicts served with the traditional combination of poached eggs topped with a perfectly made Hollandaise sauce. The Southwest Benedict served with an open face tamale, green chile, and chorizo is the one dish at Over Easy that keeps me coming back every time and I highly recommend it for those looking for a lunch or breakfast with a pleasant kick. Another equally impressive lunch item is the mouthwatering avocado & cheddar chicken melt prepared with a combination of all natural free range chicken, avocado, basil aioli, melted cheddar, applewood bacon, and sliced tomato served on top of a ciabatta bun. The chicken was cooked perfectly, the cheese gooey, and the avocado tasted fresh off the farm.

Everyone could use a pick-me-up every once in a while, and what says “pick-me-up” more perfectly than mimosas or bloody Mary’s on a Sunday morning? Over Easy’s diversity of freshly squeezed juices, coffee drinks, and alcoholic beverages provide a refreshing compliment to any of their main dishes. The organic morning margarita or the luscious lavender mimosas are the perfect hairs of the dog for those struggling after a long Saturday night.

A review of Over Easy would surely be incomplete without mentioning their friendly and inviting staff whose quality mirrors that of their food. Their enthusiasm for outstanding customer service have made every visit entirely worthwhile.
